I was on my way to North Beach's Little City Meats and dropped into Cavalli Cafe for a quick macchiato. I was surprised to see Piero, the Tuscan truffle guy, at the kitchen sink.
They keep the dirt on them until the day they cook them. Don't worry, when they weigh it out for selling, they subtract the weight of the dirt.
